Black eyed peas are a symbol of luck in the new year, especially in the South. We also tend to pair them with greens, which represent prosperity. It has been said that the tradition started sometime around the Civil War era and has been passed on from generation to generation.
For some, this tradition also means a year’s worth of good health because of black eyed peas’ nutritional value. Whatever the reason, they are a New Year’s staple and are made many different ways. They’re full of fiber, easy to make and SO versatile.
