With the Big Game coming up in February, everybody’s looking for fun food to make for their football parties. There’s the usual cheese dips, salsas, mini burgers, and wings. They’re all great, but just so typical.

They’re so not.

On top of being severely, addictively delicious, they’re actually not that bad for you. 

I went with lean ground turkey from Sprouts (exceptional quality, by the way) and I added peppery arugula and spinach to round it all out.

Leaner and you’ll get your greens in!

These are perfect for entertaining; you can customize them by decreasing or increasing the buffalo sauce and blue cheese according to your taste – the hotter the better for me. The greens you see is a mix I usually buy that’s found at Sprouts and even other grocery stores; arugula and spinach. You should have no problem finding it, but if you do you could buy them separate or just pick one.

I love arugula, and I like spinach, but I love the nutrients that both provide so I chose the combination.

How To Make Buffalo Turkey Sloppy Joes

What You’ll Need

Ground Turkey – The protein. Ground chicken or beef would also work if that’s what you have on hand.

Buffalo Sauce – Because it wouldn’t be “Buffalo” without it. My favorite is Moore’s.

Onion – For a little snappiness, and flavor.

Worcestershire Sauce – For deep umaminess.

Blue Cheese – This cheese is buffalo’s favorite side kick. Gorgonzola would be a good alternative.

Whole Cream – For richness and sturdiness in our blue cheese sauce. Whole milk or half & half could work in a pinch.

Butter – This has two jobs – in the blue cheese sauce and on the toasted buns.

Arugula & Spinach – Because we have to have some greens to contrast the richness. (It’s not that rich, but we still need it).

Yeast Rolls – My favorite slider “vehicle”. Dinner rolls, slider potato rolls and Hawaiian rolls would all work.

Buffalo Turkey Sloppy Joes

Yield: 8 sliders
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Sloppy Joes taken to the next level - Lean ground turkey, buffalo sauce and blue cheese on soft yeast rolls give this typical sandwich a delicious makeover.

Ingredients

Instructions

  1. Brown ground turkey over medium heat, stirring consistently until brown.
  2. Add buffalo sauce and Worcestershire and stir; remove from heat.
  3. Melt ⅓ cup butter over medium heat and add onions and saute for 5 minutes, then add whole cream and blue cheese. Whisk until slightly thickened.
  4. Melt remaining butter in microwave in a small bowl.
  5. Toast bun halves and brush melted butter over each.
  6. Assemble Sloppy Joes by layering arugula and spinach leaves, ground turkey, blue cheese sauce and extra buffalo sauce and blue cheese, if desired.

Notes

Make sure to have extra buffalo sauce and blue cheese crumbles on hand for serving.
