Just a simple little recipe today before I announce the Ingredient for our Challenge Monday this week. I know we have been away for a few weeks, but we’re back and there are a few exciting things happening behind the scenes with ICM (there will be announcements soon!).
This is the one of the easiest things to make, and one of my favorite ways to use basil.
Insalata Caprese
1 lb fresh mozzarella, sliced about 1/4″ thick
3 ripe tomatoes, sliced
1/2 cup fresh basil leaves
Balsamic vinegar, for drizzling
Coarse salt
Pepper
Layer the mozzarella, tomatoes and basil leaves. Drizzle the vinegar, then plenty of salt and pepper.
If you don’t like balsamic vinegar, you could just use some extra virgin olive oil.

This is my favorite way to eat tomatoes! There’s a restaurant in KC that my mom and I used to go to when she visited and we would request this salad even after they took it off the menu.
