I did some deep frying last night.
For a very long time, I really tried not to fry anything. I bake, grill, broil and steam. I think as I get older I’m learning to throw caution to the wind.
‘Cause you only live once. Speaking of that, my birthday is Monday. Guess how old I’ll be??
21, of course.
Ok, fine, 22. gah.
Now, keep in mind, I’m not advocating deep frying everything everyday. There’s no need in clogging up your arteries – CABG’s are expensive and clogged arteries are SO 2012.
But, every now and then, do it the real way and fry something up just for shits and giggles (and taste). Then go back to your healthy ways.
These, my friends, are french fries that have a distinct sesame taste (although Mark couldn’t taste it – who cares – I could) and a very unique dipping sauce consisting of wasabi, soy sauce, mayo and cream cheese.
It’s like a french fry and a special piece of sushi met and had children.
Ingredients
- 3 lbs Russet potatoes, washed and cut into french fries
- 3/4 qt canola oil
- 4 tbsp sesame oil
- Sea salt
- 1/2 8 oz block cream cheese, at room temperature
- 1 cup mayo
- 3 tbsp wasabi paste - found on the Asian isle in the grocery store (you could also use wasabi powder, but I'm not sure what the equivalent measurement would be)
- 2 tbsp soy sauce
- 2 tbsp water (more if you need the sauce thinner)
Instructions
- In a large dutch oven bring the canola and sesame oils to 375 degrees (about between medium high and high on your stove).
- Add the potatoes and fry until almost golden brown.
- Drain on a plate lined with paper towels and sprinkle with plenty of sea salt.
- Whisk together the cream cheese through water.
- Serve 🙂
Ok, whatever, that was a crazy way to describe it but it’s my perspective.
As good as baked fries are, there’s nothing like the deep fried – clog your arteries – greasy as all hell french fries. {In moderation, of course}.
You can eat these with burgers, a tuna sandwich or make them to pair with some really good tuna tataki or steak tartare.
OOOhhhh that would be fabulous.
These are divine – Don’t skimp on the dipping sauce.

Those look great. I love the idea of adding some sesame oil. And when you fry right the foods don’t soak up too much oil so you don’t have to feel guilty!
