Caprese Dip

I have a confession; I want to get married to this dip and live happily ever after.  

This Caprese Dip is that delicious.

Caprese Dip

This is one of the best (not to mention easy) things you’ll make this season. It’s just a few ingredients – fresh Mozzarella cheese, fresh basil leaves and chopped tomatoes are the key players here.

What is Caprese Dip?

Caprese Dip is the dippable form of the classic salad, Caprese, that is made with fresh Mozzarella cheese, ripe tomatoes and fresh basil leaves.

It’s usually drizzled with balsamic vinegar or vinaigrette. This is best when the ingredients are at the peak of the season (middle to end of summer), and the flavor combination is ridiculously delicious.

I actually used canned petite diced tomatoes the first time I made this, but since then I’ve used grape tomatoes and I like that even better.  

I definitely have an affinity for the tomato and cheese combination – this morning for breakfast I had a Monterey jack, pickled jalapeño and tomato (fresh) grilled cheese. In the moment it was the most exquisite thing I had ever tasted. Of course that’s dramatic, but I was starving.

I would still have to say it was absolutely delicious.

We scooped this up with pita chips, which was perfect, but you could also pile this on crusty french bread or dip with your favorite crackers.

Remember when I made these Caprese Egg Rolls? I have a feeling a little of the balsamic dip I made for them would be really good drizzled on top of this; I’ll have to try that next time.

Caprese Dip

Caprese Dip

Yield: 8 servings
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 20 minutes

The classic salad made of Mozzarella cheese, fresh tomatoes and basil made dippable!

Ingredients

  • 16 oz fresh Mozzarella cheese, cubed or grated
  • 8 oz cream cheese
  • 2 tbsp mayo
  • 15 oz can petite diced tomatoes, OR a pint of grape tomatoes, halved
  • 2 tsp olive oil
  • 1 tsp red pepper flakes
  • 1 cup fresh basil leaves, chopped
  • 1 tsp kosher salt
  • 1 tsp coarsely ground black pepper
  • Crackers, fresh bread or pita chips for dipping

Instructions

  1. Preheat oven to 375°, and spray a baking dish with nonstick spray.
  2. In a large mixing bowl combine cream cheese, mayo and Mozzarella cheese, spoon into baking dish.
  3. Combine tomatoes, olive oil, red pepper flakes, salt, pepper and basil together and pour over cheese mixture.
  4. Bake for 15-20 minutes, until bubbly.
